It all depends on what you want to do. The monochrome output is a composite out signal. You can convert the signal, but you would get a cleaner output if you stuck to CGA. However, I understand CGA inputs are not particularly common anymore.
There are alot of threads on here about signal converter boxes though. Perhaps have a dig through before commiting?

In the end I want the output to be compatible with as many setups as possible.

Well, go for the composite out then. However, you still need to work with CGA timing to get the original signal to do what you want anyway.
